Guava Refrigerator Cake

YIELD: Serves 12



Ingredients

  • 2 Tbsp. gelatin

  • 1/2 cup water

  • 1/2 cup boiling water

  • 2/3 cup sugar

  • 1 cup Hawaii's Own frozen Guava Nectar concentrate

  • 1 Tbsp. lemon juice

  • 1 9-inch angel food cake

  • 4 egg whites

  • 1/8 Tsp. salt

  • 1 cup heavy cream, whipped or 1 packaged Dream Whip

A round cake with a creamy pink icing, topped with sliced guava arranged in a star pattern. Whole and halved guavas are placed around the cake on a pink surface.

Directions

  1. Soften gelatin in water.

  2. Stir into boiling water. Add sugar and stir until dissolved. Stir in Guava Nectar concentrate and lemon juice. Chill until mixture begins to thicken.

  3. Tear angel food cake into small 1 inch pieces. Oil bundt pan. Put a layer of pieces in prepared pan.

  4. Beat egg whites with salt until soft peaks of foam.

  5. Whip Guava Nectar mixture until fluffy; fold in egg whites.

  6. Pour part of mixture over cake layer and continue alternating layers until all cake pieces and Guava mixture are used.

  7. Push cake and filling down into pan. Chill several hours or overnight. Unmold and frost with whipped cream.
